Oyster Tasting Guidelines
Oyster tasting criteria are similar to wine tasting.
Just like wine, oysters offer a range of flavors and textures.
Just like wine, the characteristics of oysters vary depending on the technique used by the farmer and the geographic area where they are grown (Merroir).
In varying degrees, oysters offer the following flavors and textures:
Flavors can be crisp, voluptuous, sharp or mild:
Iodine
Brininess
Sweet
Salty
Nuttiness
Flint
Metal
Cucumber
Textures can be:
Firm
Creamy
Crunchy
Velvety
ATTENTION!!
This is the reason oysters must not be stored in a tank.
When oysters are stored in artificial water, all oysters will taste the same. The cheapest Fine de Claire will have the same flavor overtones as a Perle Blanche.
Never accept oysters that have been stored in a tank.
Oysters should be stored in the refrigerator at 4-6 degrees C covered with a wet cloth. In this manner they can be stored for two weeks and even more.
